Beet.

'Bull's Blood'. 21 days for baby leaf, 44 days for root. Deep burgundy leaves provide color to salad mix. Roots show striped rings when sliced. Soil: well-drained, neutral to slightly acidic garden loam. Best growth during cool weather. Minimum sun: 4 hours. Keep well irrigated to prevent disease. Use tops in salad.

. 32 days. A traditional Italian specialty combining the flavor of mustard greens and broccoli. Buds are harvested as they appear, just before flowering. Use row covers to protect from pests.
